Ingredients:

Chicken   1 whole piece
Rice wine  2 tbsp
Salt      2 tbsp
Ginger   6 slices
Garlic    5 pieces (unpeeled)
Spring onion   6 pieces
Lemongrass   5 pieces
Rice         2 cups
Minced ginger  3 tbsp
Chopped spring onion  5 tbsp
Soya sauce  2 tbsp
Shredded red pepper  3 pieces
Water        as needed
 
Methods:
  1. Wash the chicken, marinate with salt and rice wine for few minutes.
  2. Soak the rice.
  3. Add the sliced gingers, spring onions, garlic and lemongrass into the water and bring it to a boil.
  4. Soak / dip the whole chicken in the boiling water for 3 times and cook it over a low level for 25 minutes.
  5. Mince the ginger and mix with chopped spring onion, chili and chicken oil. Season with 1/2 tsp salt and chicken oil.
  6. Take the chicken out and soak it in the ice water.
  7. Cook the rice with 2 cups of chicken broth.
  8. Shred the chicken or cut the chicken into chunks and plate.
