Ingredients:

Pomfret / Pomfret belly     1 (1/2 catty) / 3-4 pieces
Oil
 
Seasoning:

Spring onion    4 pieces
Coriander     4 pieces
Garlic  5 – 6   cloves
Shallot   5-6 pcs
Seafood sauce 3 tbsp
Soya sauce  1 tbsp
Black Soya sauce    1 tbsp
Oyster    2 tbsp
Ground pepper  as needed
Brown sugar     3 tbsp
Salt      1/3 tsp
Shaoxing Wine     1 tsp
Mui Kwe Lu Wine     1 tsp
 
Side dish for oven-baking
(I guess)
Carrots(roll cutting)     1 piece
Broccoli              1 piece
 
Methods:
  1. Wash the fish and drain.
  2. Slice the fish if it is a whole and marinated in the seasoning.
  3. Preheat oven to 160 C°.
  4. Take the sliced fishes out from the seasoning. Place on the baking tray with side dish around.
  5. Sprinkle the marinated seasoning, 1tsp Mui Kwe Lu wine and some oil and bake for 10-15 minutes.
  6. Flip the fish over and pour the juice on top of the fish. Bake for 10-15 minutes.
  7. Flip over again and bake with 200 C° for 2 minutes.
  8. Serve with mayonnaise.
