Peel and rinse hairy cucumber. Cut into 2 cm thick slices and remove pulp from the centre.
Soak dried mushrooms the night before to ensure they are softened thoroughly. Rinse and chop into fine pieces. Add mushrooms into shrimp paste and mix well with a tiny pinch of salt, sugar and pepper.
Dust the centre of hairy cucumber with corn starch and stuff with shrimp paste.
Line stuffed hairy cucumber on a plate. Add sauce and steam for 10 minutes with high heat. Add spring onion to cucumber before serving.
