Oven: preheat at 200 degrees
 
Ingredients:

Low grain flour              200 g
Soda                               2 tsps
Unsalted butter              65 g (cold)
Cold milk                         120 g
Lemon juice                    1 tsp add to milk
Sugar                               35 g
Salt                                  1/4 tsp
Cranberry                        50 g
Egg mix   (1 egg + 1/2 tbsp milk + little salt)
 
Method:
 
  1. Cut butter, keep frozen (cold)
  2. Sieve flour
  3. Soak cranberry in hot water for 10 minutes. Dry.
  4. Sieve flour, soda, sugar, salt into bowl. Rub in butter.
  5. Add milk, a little at a time and make a dough. Do not over mix.
  6. Mix in cranberry.
  7. Put inside fridge for at least 1 hour to rest.
  8. Take the dough out from fridge and roll out into 2 to 2.5 cm thick, cut with round cutter.
  9. Brush over with egg mix and put into oven and bake for 13 to 15 minutes until golden brown.
