Ingredients:

Pork belly  1.5 catty
Spring onion    5 pieces
Ginger    3 slices
Rice wine     2 tbsp
 
Dressing:

Dark soya sauce   6tbsp
Light soya sauce     2 tbsp
Sugar         as needed
Garlic        5 pieces
Minced ginger  4 slices
Chopped spring onion    2 tbsp
Shredded red pepper  as needed
 
Methods:
  1. Bring a pot of water to a boil. Add spring onions. Take the spring onion out when colour changes.
  2. Bring a pot of water to a boil with spring onions, sliced gingers and rice wine. Add the pork belly and simmer for 25 minutes.
  3. Cool the pork belly down and slice as desired. Arrange on a plate.
  4. Add the dressing with minced garlic, minced ginger, chopped spring onion, dark soya sauce, light soya sauce and sugar.
