  • 1 small cauliflower, trimmed and cut into small florets
  • 1 tbsp heated vegetable oil  
  • Pinch of salt, pepper, chopped green onion 
  • Chicken broth (optional)
  1. Boil cauliflower in a pot of hot water until tender, about 10 minutes
  2. Drain cauliflower; transfer cauliflower to food processor; add oil, salt, pepper, green onion, puree until smooth
  3. If too dry, may add chicken broth and blend to desired texture
