農曆新年快到了,如果大家想在新年期間吃得健康,留意以下幾點:

1.多用蒸、煮、燙、燉等不用額外加大量食油的方法製作料理。

2.吃馬蹄糕、芋頭糕或蘿蔔糕時,盡可能以蒸代替煎,可減少油脂攝取。如果自己蒸煮芋頭糕或蘿蔔糕,記得多些蘿蔔芋頭少些臘味,便最為理想。

3.含糖食物容易使人發胖,且對血糖有不利影響,要小心注意,不要多吃,傳統的糖蓮子、糖蓮藕,還有椰汁糖年糕等等,只宜淺嘗。

4.盡量少吃勾芡的食物,醬汁是由豉油、味精、糖、鹽組成,高鹽使水分留在人體造成水腫、血壓升高,不利心臟、腎臟。

消費會今期檢視了65款蠔油、番茄醬、XO醬、辣椒醬及辣椒汁的營養標籤,比較當中的鈉及糖含量,發現蠔油的鈉及糖含量高,但以個別樣本計,最高鈉與最高糖的調味料則是1款辣椒汁和1款辣椒醬!要過一個健康的農曆新年,先來看看這些調味料的鈉、糖含量孰高孰低,吃糕點愛醮醬的消費者尤其要懂得選擇!

新年食團年飯,不少人都喜歡食盆菜既方便又好意頭,依足這些方法做大家食盆菜就食得健康又開心啦。

1.盆菜多以肉類、海味為主要材料,而且分量可能超過每人每天所需,故建議選購大小適中的盆菜,並與多人一同分享,同時只進食適量的肉類包括魚類、海產及豆製品。

2.盆菜中的肉類多是脂肪含量較高的食材,例如:腩肉、豬手、鵝掌等。選購時,應留意食材,選擇含較少肥肉、油炸食品及加工製素肉的款式,亦可要求用瘦肉代替,減少攝取過量的脂肪。

3.烹煮盆菜時,會大量添加含鹽量較高的調味料,例如: 蠔油、南乳、柱侯醬等。訂購時,可要求汁料分開盛載,並且不添加額外汁料,避免攝取過量鹽分( 鈉質) 。

4.額外添補焯菜以確保進食足夠的蔬菜。購買及預備蔬菜時,可以每人每餐約160克(1⁄4 斤,未煮熟計) 蔬菜為目標。

5.進食穀物類食物(例如:白飯/ 紅米飯/ 烏冬/ 米粉) ,緊記穀物為主,餸菜為副。

6.減少進食肉類的肥膏及家禽的皮脂。

7.切勿以醬汁拌飯或將穀物類食物及蔬菜放入鍋中加熱。

8.建議以水果作甜品。

9.患有慢性疾病的人士,例如: 高血壓、糖尿病、痛風症等,可根據醫護人員的指示淺嚐盆菜,以免影響病情。

10.不要過早提取盆菜,於食用前半小時至一小時為合適,並於提取時確保盆菜保持在攝氏60°C以上。

11.注意翻熱程序,詳閱容器適用的翻熱方法。

12.食用前,必需將食物翻熱至75°C或以上。

13.進食時應使用公筷或公羹。
