Introduction: Garlic has sulphur compounds and has strong germicide effect.  It can be used to clean up the intestines and remove decayed matters.  Garlic can lower lipid and prevent coronary heart disease, arteriosclerosis and the formation of thrombosis.
 
Note: It is not advisable to eat garlic raw because it will stimulate the stomach.  Allicin does not adapt to heat and can easily dissolve, hence reducing its germicidal effect.  So we can add garlic when the food is nearly cooked.  Garlic with sprouts will lose its therapeutic effect.  Garlic will increase acid in the stomach and people with gastrointestinal problems should not eat garlic.  Excessive intake of garlic will affect eyesight.
 
Buying: Choose garlic which has a dry skin, a firm bulb and does not turn dark and soft.  It should not have any sprouts or insect bites.
