Ingredients:
 
Pea sprouts        100g
White shrimps    12 pieces
Minced ginger     1/2 tea spoon
Chili                      1 piece
Salt                        1/4 tea spoon
Rice wine             1/2 tea spoon
Cornstarch           little
 
Method:
  1. Wash pea sprouts cut away hard stalks. Slice chili at an angle and and mince ginger.
  2. Peel shrimps except its tail. Devein shrimps from their back. Dry and marinate them wit salt, pepper and wine for a while. Set aside.
  3. Add oil to wok; lay shrimps evenly. Fry on both sides of shrimps until golden brown. Remove shrimps from wok. Add oil again and fry minced gingers before putting the pea sprouts into the wok.
  4. Stir fry all ingredients for 1 – 2 minutes. Season and serve.
