Watercress     400g
Pork bone      1000g
Yam           1/4 pc
Carrot         1pc
Almonds        50g
Pitted red dates  10 pcs
Candied dates    3 pcs
Salt            appropriate amount
  1. Wash watercress. Scald pork bones in boiling water to bring the blood out. Peel and chop the carrot and yam. Pit the red dates. Rinse  red dates and almonds with hot water.
  2. Put all ingredients, except the watercress, in a pot and boil over medium or high flame for 10 minutes without covering the pot. Skim off the scum before cover the pot and simmer for 2 hours.
  3. Add watercress after one hour.
  4. Season with salt before serve.
