  • 4-5 oz chicken* (dark meat, i.e. thigh, preferred) 
  • Scallion ginger sauce - minced green onion, grated ginger, salt, oil
  • Chicken broth (optional)

  1. Steam chicken with skin on, until cooked; rinse with old water
  2. Prepare Scallion ginger sauce
    1. mix the chopped green onion, ginger; dash pinch of salt,
    2. pour heated vegetable oil over the ginger/green onion mixture 
  1. Remove skin and bone from cooked chicken; cut into small pieces
  2. Mix chicken pieces and scallion ginger sauce in a blender.  Blend until smooth consistency.
  3. If too dry or thick, add chicken broth and blend to the desired texture.      
• Option – can use cooked steam chicken or Haninan chicken instead
